I love fixing dishes that are tasty, colorful, and healthy, especially when they’re quick and easy. When I can pull one together in a matter of minutes using staples I always have on hand…so much the better.
That was how I approached meal time yesterday. The menu called for turkey burgers — one of my husband’s absolute favorite meals. The trick is lots of seasonings. I rarely ever fix them the exact same way twice, but I always add in lots of spices. To go along, I included boiled potatoes, smothered with creamy jalapeno dip.
To round out the meal — and provide some healthy veggies and more protein — I turned to a quick family favorite.
SIMPLE THREE-BEAN SALAD
As the name suggests, the recipe is simplicity itself. No cooking. No fuss. Just a few ingredients, a can opener, and a little advance preparation.
- One can cut green beans
- One can kidney beans
- One can chickpeas
- One can sliced black olives
Mix these ingredients in a large bowl, then add in 3/4-cup Italian salad dressing. Stir to coat, then refrigerate for at least 3 hours before serving.
I vary the recipe at times, depending on what I have in the cupboard. Sometimes I’ll add wax beans, or shelly beans. I’ll use red kidney beans, dark red, or even black beans. It all depends on what I have handy at the time. Sometimes I’ll throw in a handful of crisp bacon bits, and sometimes I’ll top it off with a sprinkle of Parmesan cheese. Once in a while, I’ll add a few pimentos, and I almost always garnish it with sprigs of fresh parsley or cilantro.
So, with only five minutes of kitchen preparation time, you can have a delicious, healthy dish that goes well with anything you’re serving. I like it with poultry, but it’s also great with pork or fish, and it’s a nice change of pace from potato salad or cole slaw when you’re fixing hamburgers.
