As promised, I’m sharing the “Cowboy Cookies” recipe…but it’s not the one I’ve used before. The old recipe is lost on an old computer. I neglected to copy the file when I changed to the new one in May.
So, I went browsing today. This recipe sounds close to the one I had before, and baking cookies sounds like a fun thing to do this weekend.
1 Cup Shortening
1 Cup Granulated Sugar
1 Cup Brown Sugar
1 Teaspoon Vanilla Extract
2 Cups All-Purpose Flour
1 Teaspoon Baking Soda
1/2-Teaspoon Baking Powder
2 Cups Rolled Oats
1/2-Cup Chopped Pecans
1 Package Chocolate Chips (6 Ounces)
1/2-Cup Shredded Coconut
Preheat oven to 350 degrees F.
In a large bowl, mix shortening and sugars with electric mixer. Add eggs and vanilla. Beat until well blended. Stir in flour, baking soda, salt, and baking powder. Add oats, nuts, chocolate chips, and coconut. Mix until combined.
Spoon cookie mixture onto greased, foil-lined cookie sheet. Bake for 8-10 minutes. Transfer cookies to a warm rack to cool.
Recipe makes approximately 2 dozen cookies.
